"Epi Recipe" (NAVYPOOL Co., Ltd.) will be launching a special project themed on "Hometown Ozoni," a traditional dish passed down throughout Japan.
Ozoni, an essential dish for New Year's celebrations, is a special dish that varies greatly depending on the region and the household. Whether it's the flavor of your hometown, the recipe you learned from your grandmother, or a secret family recipe, why not share this precious "memory of a dish" with us and pass it on to the future?
Why is it called "Ozoni"?
EpiRecipe is a media outlet that records and disseminates the techniques and stories that go into cooking, with the concept of "Leaving the memory of a dish for the future."
Ozoni is one of the dishes in Japanese food culture that particularly reflects regional characteristics. In the Kanto region, ozoni is made with square rice cakes and a soy sauce base, while in Kansai it is made with round rice cakes and white miso, and in Hakata it contains yellowtail, and each of the 47 prefectures has its own unique way of making it.
However, with the trend towards nuclear families and changes in lifestyles, this precious food culture is in the process of being lost. This project aims to rediscover the rich local food culture found in Showa-era cookbooks in the modern era and pass it on to future generations as a digital archive.
