Spinach with sesame dressing (basic sesame dressing)
Be careful not to overcook the spinach, and immediately put it in cold water to maintain its vibrant green color. Mix the ground sesame seeds in just before serving to bring out their aroma
How to make it

Blanch the spinach in boiling water and then transfer to cold water to cool

Squeeze out the excess water and cut into 3-4cm lengths

Mix ground sesame seeds, soy sauce, mirin, and salt (and dashi if desired) in a bowl

Add the spinach and toss

Serve in a bowl and you're done
