Sinkyoyaki silver cod
Mix mirin and dark soy sauce and marinate the silver cod fillets for about 5 minutes
Lightly wipe off the moisture from the marinated silver cod, sandwich it in Nishiki miso, and leave it to marinate overnight
Heat a frying pan without adding oil and cook the silver cod that has been marinated overnight, skin side down, over medium heat
Once the skin side is cooked through, flip it over. Mix 1 tablespoon of sake with 1 teaspoon of Saikyo miso and add to the frying pan
Once the miso is well coated with the silver cod, it is done
