Fluffy fried burdock and yam
Chop the burdock into shredded pieces.
Grate the mountain yam.
Combine the burdock and yam in a bowl, turn into bite-sized pieces, and fry them golden brown in hot oil.
After about 3 minutes, remove it in a bowl when it's golden brown and pour salt and Italian parsley while it's still hot. Serve it on a plate and garnish with arugula and it's done.
