Fried sea bream wrapped in bread
Scrape off the peel of the sea bream fillet, cut it into coarse minced pieces, then sprinkle a little salt.
Place the sea bream meat into three equal parts on top of the sliced bread with its ears, then add flour dissolved in water, and form by stitching it together at the four corners.
Place in oil heated to 180°C with seams down and fry for about 30 seconds. Turn it over halfway through and pull it up once it's browned.
Put A in a pot, bring to a boil, add [3] and simmer for about 3 minutes. Place in a dish and add matsuba yuzu to finish off.
