Fried monkfish herb
Chop the white leeks and rosemary into a bowl with the chopped monkfish.
Add the seasoning [A] to [1] and knead it with your hands to blend in the flavor.
Sprinkle the monkfish with potato starch and fry slowly in frying oil heated to 180°C for about 4-5 minutes. Once the surface is fried, remove it on a net and drain the oil.
Make a green onion dressing. Chop the white onions, place them in a bowl with other seasonings, and mix well.
Place the monkfish in a bowl and pour in the green onion dressing. Finish with olive oil and topped with parsley and siblet if desired.
