Celery yolk vinegar

Cut the celery into thin slices, wrap it in a cloth and squeeze out the excess water
It is a good idea to make the egg yolk vinegar (see separate recipe) a little thicker and then add bonito stock to adjust the consistency when using
Place the celery in a bowl and pour the egg yolk vinegar over it. If desired, top with chili threads cut into 1cm pieces
