Fried Ginkgo
Peel the outer shells off the ginkgo nuts. Heat the frying oil to about 160-170°C and add the ginkgo nuts and fry
It's ready when the skin peels off in the oil. Remove to a wire rack and sprinkle with salt while still hot to let the flavors blend
Serve in a bowl and garnish with maple leaves, if available
