■Basic raw sesame tofu
Combine white sesame seeds and water in a bowl, let sit overnight, then blend in a blender for about 10 minutes
Strain the sesame seeds in a blender, then add 90g of arrowroot flour and mix. Once the arrowroot flour is well mixed, strain again
Put the sieved white sesame seeds from [Step 2] into a large pot and heat over medium heat. Use a wooden spatula to knead the mixture, scraping the bottom of the pot
Once it becomes sticky, knead it well for about 20 minutes. (*Be careful not to burn the bottom.)
Pour into a tray and chill in the refrigerator until done. Serve with Happo Bijin topping and garnish with wasabi
