Fried bamboo shoots

The bamboo shoots are battered in jade, giving them a spring-like green appearance. The bamboo shoots are pre-boiled, so don't worry about the frying time; just check the condition of the batter before removing them

How to make it

Prepare the jade batter (see separate recipe). Cut the bacon into 2 equal pieces

Use parboiled bamboo shoots. Make a slit in the core of each bamboo shoot, place a slice of bacon and a slice of shiso leaf between each, and lightly coat with flour

Thinly slice the tomatoes and arrange them in a circle in the center of the plate

Place in oil heated to about 160°C and deep fry. When the batter turns bright green, remove from the frying pan.

Remove to a paper towel to drain the oil, then arrange around the tomatoes (3) and serve
