Fried bamboo shoots
Prepare the jade batter (see separate recipe). Cut the bacon into 2 equal pieces
Use parboiled bamboo shoots. Make a slit in the core of each bamboo shoot, place a slice of bacon and a slice of shiso leaf between each, and lightly coat with flour
Thinly slice the tomatoes and arrange them in a circle in the center of the plate
[2] Pass the bamboo shoot through the jade garment
Place in oil heated to about 160°C and deep fry. When the batter turns bright green, remove from the frying pan.
Remove to a paper towel to drain the oil, then arrange around the tomatoes (3) and serve
