Sake lees and white miso dipping sauce

To bring out the flavor of the sake lees, we use white miso (Shinshu miso), which has a relatively mild aroma. The strength of the saltiness varies depending on the miso, so it's a good idea to taste it and adjust the flavor with soy sauce and other seasonings

Put the white miso and sake lees in a bowl and mix well. Once they are well mixed, add the kelp stock and make a loose dip
