To make the most of the flavor of sake lees, we use white miso (Shinshu miso) which has a relatively soft aroma. The saltiness varies depending on the miso, so it's a good idea to adjust the taste with seasonings such as soy sauce while tasting it.

How to make it

Add white miso and sake lees to a bowl and mix well. Once it's mixed in, add kelp stock and turn it into a loose dip.

Taste and adjust the saltiness with soy sauce. Add the pepper and mix quickly.

Serve in a bowl and cut your favorite vegetables such as carrots, radish, cucumbers, celery, and other sticks to complete.
