Fried Camas Cheese Crackers

These fried dishes are made with cheese crackers instead of breadcrumbs. Cheese crackers are naturally salty, so be sure to avoid salt sprinkling the beak meat. The meat is thin so be careful not to overfry.
How to make it

Remove the scales of the puppy, remove the head and internal organs, and remove three pieces. Cut off the abdominal bone and then remove the bone by bone deboning.

Sprinkle salt and white pepper lightly on both sides of the flesh. Crush the cheese crackers roughly and batter them in the order of flour, egg mixture, and crackers.

Heat the frying oil to about 170°C and add the meat from [2] to fry. The temperature should be low at first, and then gradually increase the temperature to close to 180°C.

After about a minute and a half, when the flesh floats upwards, remove it onto a net and drain the oil.

Make a finishing salad.
Put arugula and seasonings in a bowl and mix quickly.

Place the fries in a bowl and place the salad from [5] on top. Topped with 4 slices of radish, then sprinkle olive oil and salt to finish off.
