Fried Camas Cheese Crackers

These fries are made with cheese crackers instead of breadcrumbs. Cheese crackers are naturally salty, so sprinkle salt sparingly on the barracuda. ​​The meat is thin, so be careful not to over-fry it

Remove the scales from the barracuda, remove the head and internal organs, and fillet it into three pieces. Cut off the belly bone and remove the bones using a boner

Lightly sprinkle salt and white pepper on both sides of the fish. Coarsely crush the cheese crackers and coat them in flour, egg mixture, and crackers, in that order

Heat the oil to about 170℃ and add the fish pieces from [2]. Start with a low temperature, then gradually increase the temperature until it reaches nearly 180℃

After about a minute and a half, when the flesh floats to the top, remove it onto a wire rack to drain the oil

To make the final salad,
add the arugula and seasonings to a bowl and toss lightly.

Place the fries in a serving dish and top with the salad from [5]. Top with quartered radishes, and finish by sprinkling with olive oil and salt
