Fried shrimp in okara batter

These fried shrimp are made with dried okara instead of breadcrumbs, and are coated twice to give them a crispy texture.

How to make it

Prepare dried okara (see separate recipe).

Pat the shrimp dry and sprinkle with salt. Coat them with dried okara, dip them in egg white, and then coat them with dried okara again.

Heat oil to about 170°C and fry the shrimp meat for about 20 seconds, then add the whole thing and fry for 1.5 to 2 minutes.

Remove to a wire rack to drain the oil, then place on a plate and garnish with shredded cabbage and halved sudachi citrus fruit.
