Fried shrimp with aroma
Pretreat the shrimp and drain thoroughly. Sprinkle potato starch on the belly, with the shell still attached.
Heat the frying oil to 190°C and fry the shrimp for about 1 minute. Mix well with chopsticks to make the shrimp even more coloured.
Fry the white leeks and sashimi in a heated frying pan with 1 tsp perfume. Add the fried shrimp to the aromatic scent.
Season with salt and sansho pepper to finish.
