How to make it

Soak the dried shiitake mushrooms in water and return them in the fridge overnight.

Slice the shiitake mushrooms back into thin slices.

Add dashi stock, soy sauce, mirin, and sugar in a pot and heat over medium heat.

Add the shiitake mushrooms and simmer over low heat for 5 minutes.

Turn off the heat and mix in the flavor and it's finished.
