How to use dried shiitake mushrooms
Soak dried shiitake mushrooms in water and refrigerate overnight
Thinly slice the rehydrated shiitake mushrooms
Add the dashi stock, soy sauce, mirin, and sugar to a pot and heat over medium heat
Add the shiitake mushrooms and simmer over low heat for 5 minutes
Turn off the heat, let the flavors blend, and it's done
