Pizza tofu
Slice the tofu into 4 equal pieces and drain under a plate or other weight for 20 to 30 minutes
Wipe the drained tofu dry and fry it in a heated frying pan with 1 tablespoon of olive oil. Once golden brown, flip it over and season with salt and pepper
Once both sides are golden brown, remove to a tray coated with 1 teaspoon of olive oil (not included in the recipe) and sprinkle with a little salt (not included in the recipe)
Spread 1 tablespoon of tomato sauce on each piece of tofu, then top with the anchovies, tearing them apart with your hands
Sprinkle with a little oregano and top with mozzarella and Parmesan cheese
Finally, drizzle about 1 tablespoon of Ollie's Oil (not included in the recipe) over the top and bake in the toaster oven for about 5 minutes until the cheese is melted. Place on a plate and top with Italian parsley to finish
