Tofu roe
In the old days, people called tofu yuzu, which was cut into small pieces, to make it look like rice. This is the cooking method described in Tofu Hyakunen.
How to make it

Cut the silken tofu into 3mm squares and soak it in water.

Add [A] to the pot, heat it, and when it's warmed, add the cut tofu.

Mix gently to prevent the tofu from dissolving, lightly thicken it with water-soluble potato starch and it's finished. Topped with green seaweed if desired.
