Stir-fried bitter melon and somen noodles with balm oil
Boil somen noodles to a little hard.
Remove the bitter melon with a spoon and rub with salt. When the bitter melon becomes soft with salt, slice it into thin slices.
Heat 2 tablespoons of perfume in a frying pan and slowly stir-fry the shredded ginger to give it a scent.
Once the ginger aroma is enhanced, add thinly sliced bitter melon, sake, and Chinese soup and bring to a boil.
Once the bitter melon is cooked, add the boiled somen noodles and mix well. Season with salt and pepper to finish.
