Fried bitter melon, corn and shrimp

Remove the pulp from the bitter melon with a spoon and rub it with salt. Once soft, cut it into strips. Lightly coat the surface with potato starch
Mash the seasoned shrimp with the flat side of a knife to make a paste, then spread it on the bitter melon
Cut the raw corn so that the kernels do not fall apart, lightly coat with potato starch, and then layer it on top of the bitter melon (2)
Coat with a moderate amount of basic batter and fry in hot oil until crispy
