This dish features the bitter taste of bitter melon, sweetness of corn, and the plump texture of the shrimp. The trick to using corn gently sprinkle it with potato starch to prevent it from falling apart.

How to make it

Remove the bitter melon cotton with a spoon and rub it with salt. If it feels soft, cut into strips. Sprinkle the surface with potato starch.
