Broccoli and Nako Black Honey
Add a little salt to plenty of water to the broccoli and boil it in a colour, then drop it in ice water to prevent coloring. (Bring the core part slightly longer.)
Blend the boiled broccoli and [A] through a blender and stir until smooth.
Once smooth, transfer to a pot, add the agar and heat. Mix well, remove from heat just before it boils and remove crude heat.
Cover a small bowl with plastic wrap and pour one bite of the 3 pieces (approximately 80 grams) of the crude heated [3], tie it round using a rubber band, and drop it in ice water.
Let it cool for about 30 minutes, then remove the plastic wrap on a dish with black syrup and place it on top, sprinkle with kinako and it's finished.
