Broccoli and Nako Black Honey
Boil the broccoli in plenty of water with a little salt until it is golden brown, then drop it into ice water to prevent the color from changing. (Boil the core a little longer.)
Blend the boiled broccoli and [A] in a blender until smooth
Once it becomes smooth, transfer it to a pot, add the agar and bring to a boil. Stir well and remove from heat just before it boils and let it cool
Cover a small bowl with plastic wrap, pour in a bite-sized portion (approximately 80 grams) of [3] that has cooled slightly, tie it into a circle with a rubber band, and drop it into ice water
Let it cool for about 30 minutes, then remove the plastic wrap and place it on a plate coated with brown sugar syrup, sprinkle with kinako, and it's done
