Place 1 into a mold lined with gauze and secured with rubber bands, lightly tap the surface to flatten it, remove the rubber bands and lightly squeeze the top to hold it in place, then chill in the refrigerator for 4-5 hours until all the water has evaporated and it hardens
Open the opening of the gauze, turn it over, remove from the mold, place it in a serving dish, drizzle with raspberry sauce and garnish with mint
