Oyster butter soba noodles

This dish combines the aroma of butter and the mellow umami of the oysters. You can also enjoy the soba noodles in place of udon noodles.

How to make it

Boil the soba noodles.
*Separate recipe: Please refer to How to boil soba (10.3 rules).

Make soba soup with kelp water sauce and the alphabet sweetener.

Melt the butter in a frying pan and grill the oysters. Once the oysters are cooked, add boiled soba and soba soup and warm the whole thing.

Transfer to a bowl and topped with pink pepper to finish.

  • Kelp water broth or water can be used as a substitute
    200cc
  • Happo-mibijin (can be used as a substitute with soy sauce + mirin)
    25cc
  • butter
    20g
  • Raw oysters
    3 pieces
