Somen winter melon

After removing the skin of the winter melon, peel it thinly.

Roll the peeled winter melons round and then cut into pieces about 3mm thick from the edges. Sliced winter melons tend to tear easily, so handle them gently.

Put winter melon in a bowl containing potato starch and sprinkle it with potato starch.

Place in boiling water and boil it while stirring with chopsticks to prevent it from sticking.

Boil for about 2 minutes, then simmer for a while, then remove from the heat. After giving it to a colander, soak it in ice water and cool it.

Drain and serve in a bowl. Pour the noodles with noodle soup and topped with shredded myogata.
