Mixed rice with dried saury overnight
For the overnight drying saury, cut off the head, tail and bone and cut in half lengthwise. If there are any bones remaining, remove them by bone.
Place the frying pan over high heat and cook the saury with the skin facing down. Once the skin is browned, turn it over and cook it all for about 2 minutes, then turn it off and cook it all the way through with the remaining heat.
Add [A] to freshly cooked rice and mix. Add the grilled saury and mix with a spoon spoon while shattering the saury meat.
Serve in a bowl and topped with topped shredded shiso leaves if desired.
