Mixed rice with overnight dried saury
For overnight dried saury, cut off the head, tail, and backbone, then cut in half lengthwise. Remove any remaining bones using a bone remover
Place a frying pan over high heat and cook the saury skin side down. Once the skin has browned, flip it over and cook for about 2 minutes, then turn off the heat and cook using the residual heat until cooked through
Add [A] to freshly cooked rice and mix. Add the grilled saury and mix while breaking up the saury meat with a rice paddle
Serve in a bowl and top with torn shiso leaves to taste
