How to make it

Cut off the base of the enoki mushrooms and divide each mushroom into 6 equal-sized pieces. Wrap the bacon diagonally around the enoki mushroom core and secure with a toothpick

Heat a frying pan with olive oil over high heat, add [1] and cook while rolling

Once the meat has browned all over, add the sake, turn off the heat, cover with aluminum foil, and steam

After about a minute, remove the aluminum foil and turn the heat back on. To finish, drizzle with dark soy sauce and remove from the heat

Remove the toothpicks and place in a serving dish. Top with mustard paste to taste
