Flounder has a mild flavor, so if you are pan-frying it with breadcrumbs, adding spices such as garlic and black pepper will help balance the flavor. After pan-frying, you will reheat it in the oven, so it is convenient to use a frying pan with a removable handle. If you do not have a frying pan with a removable handle, transfer the flounder to a tray and place it in the oven
How to make it

Use flounder that has been filleted into three pieces. Make diagonal cuts in the skin and sprinkle salt and white pepper on both sides

Heat olive oil in a frying pan over high heat and fry the flounder skin side down. Add herb breadcrumbs (see separate recipe), olive oil and melted unsalted butter and fry

Place the pan in a preheated oven at 200°C and bake for about 4 minutes

Once the meat is golden brown, remove it from the oven and place it on a plate. Top with arugula leaves, olive oil and lemon juice to finish
