After removing the tendons and fat from the horse meat strings, pound them with a knife and mince them

Add natto, the included natto sauce, and mustard to a bowl and mix

Place the natto in a bowl, then top with the horse meat and natto. Make a well in the center and place the egg yolk on top. Top with chopped chives to complete
