Chrysanthemum tea towel
Soak the agar stick in a non-concentrated amount of water, and when it has soaked enough, squeeze the water, tear it apart in small pieces, and place it in a pot. Put water in a pot and heat over medium heat. Keep the heat to a level of slurping and simmer until it melts completely.
Agar liquid tends to become lumps, so strain it twice using a fine sieve and return it to the cleaned pot.
Add white bean paste to the agar solution and dissolve it. Once everything is mixed and becomes soft, remove from the heat and remove any scum.
The chrysanthemum flowers are boiled underneath and thoroughly squeezed out of water. Add the yellow color and add red chrysanthemums little by little while looking at the color. Add chopped yuzu skin as well.
Place plastic wrap in a small bowl and pour [4] into a portion of about 40g per piece.
Squeeze the top of the wrap and tie it with elastic. It is best to squeeze the bottom part to prevent air from entering as much as possible. Once wrapped, place in a bowl filled with ice water and allow to cool for about 10 to 15 minutes.
Once it's hardened, remove the wrap and serve in a bowl. If you have it, add chrysanthemum leaves and you'll be done.
