Mushrooms with sake kasu sauce

Mushrooms have a light flavor, so they go well with dishes like sake kasu sauce. If you boil them for too long, the texture will become unpleasant, so once they're cooked through, remove them from the heat immediately

How to make it

Prepare the sake kasu paste (see separate recipe)

Cut off the stems of the mushrooms and make hidden cuts with a knife to allow them to cook more easily

Put kelp stock and Happomibijin in a pot, heat, add mushrooms and boil

Once the mushrooms have softened, remove from the heat and serve in a serving dish. Top with the sake kasu bean paste and it's done
