White fish fried white fan

A dish in which potato starch is fried in a batter made from melted starch is called "white fan fried". The deep frying color will make it look bad, so the key is to shorten the frying time.

How to make it

Make water-soluble potato starch so that the ratio is 1 water and 2 potato starch, and dissolve well. Add the white fish and allow the batter to blend all over.

Heat the frying oil to 170°C and fry one of the white fishes from [1] at a time. Just turn on quickly, and about a minute is fine.

Remove onto a net and sprinkle with salt while it's hot.

Serve in a bowl and it's finished.
