Yuba roll with meat

This dish reuses the broth used to pre-boil herring fillets. When using commercially available boiled herring, don't discard the broth; just use it as a broth and add seasonings

The herring fillets are pre-cooked and the broth is also used

Place two sheets of yuba on top of each other and spread them out, then place the herring on top and roll it up from the edge. Secure the seam with a toothpick

Transfer to a pot and pour in the herring broth until the meat is just covered. Cover with aluminum foil and simmer for about 10 minutes

Remove from heat, remove the flesh and toothpicks, cut off the ends, cut into bite-sized pieces and arrange in a serving dish

Pour the broth over the dish and sprinkle with dried Japanese pepper to taste
