Golden deep-fried spiny lobster
Remove the vein from the spiny lobster and cut it into bite-sized pieces
Coat with flour, coat with beaten egg yolk and fry in oil heated to about 170°C
Once the surface is golden brown, remove onto a wire rack and sprinkle with salt while still hot
Arrange on a plate lined with lettuce and you're done
