Be careful, as the oil temperature is too high, the batter will turn brownish. The flesh can be eaten even in rare state, so adjust the frying time by checking the fried color on the surface.

How to make it

Remove the spine of the lobster flesh and cut it into bite-sized pieces.

Sprinkle with flour and add the beaten egg yolks to fry in frying oil heated to about 170°C.

Once the surface is golden brown, remove it onto a net and sprinkle with salt while it is still hot.

Serve in a bowl with lettuce and it's finished.
