Egg tartare

Egg tartare goes well with deep fried foods.
It's very easy to make by simply mixing the boiled eggs with the seasonings. The boiled eggs in the recipe are not too hard and moist, so you can make the tartare itself without squealing.

[How to make boiled eggs]
Keep the eggs at room temperature. Fill a pot with water, add the eggs, and boil from the water. Once it's boiled, boil for 2 minutes, turn off the heat and leave it to finish. The boiled eggs are still clear and moist in the yolk.

Peel the boiled eggshells, smack them with a knife and chop them into small pieces.

Slice the shredded leaves into thin strips and soak them in water. Combine this with the eggs from [2], add mayonnaise and soy sauce and mix well to finish.

It goes well with fries etc. (Photo is a fried scallop and shiitake mushroom.)
