Egg tartare

Egg tartare is a great addition to fried foods.
It's very easy to make, as all you need to do is mix boiled eggs with seasonings. The boiled eggs in this recipe are not too hard but moist, so the tartare itself doesn't end up crumbly.

[How to make boiled eggs]
Bring the eggs to room temperature. Fill a pot with water, add the eggs, and boil them from the water. Once boiling, boil for 2 minutes, then turn off the heat and let them sit. The eggs are boiled when the yolk is still translucent and moist.

Peel the boiled eggs and chop them finely with a knife

Cut the shiso leaves into thin strips and soak them in water. Combine this with the eggs from step 2, then add mayonnaise and soy sauce and mix well

It goes well with fried foods (pictured is fried scallops and shiitake mushrooms)
