Sawani bowl
Finely shred the bamboo shoots, carrots, shiitake mushrooms, and burdock. Julienne the burdock and soak in water, and shred the burdock and soak in vinegar water (not included in the recipe)
Heat sesame oil in a frying pan, add carrots, shiitake mushrooms, burdock root, and pork belly and stir-fry
When the aroma comes out, add all the ingredients for the soup stock, bring to a boil and skim off the scum
To finish, add mitsuba and udo and mix lightly, then place the ingredients and grilled rice cakes in a bowl, pour in the soup, and top with black pepper to complete
