Lightly pickled turnip

is a lightly pickled dish that allows you to enjoy the sweetness of turnips and the umami of Shio Happo Bijin (a type of salt).

How to make it

Peel the turnips and cut them in half, leaving about 2-3cm of the stem. Place the cut turnips in a bowl of water and thoroughly shake off any soil that has attached to the base of the stem

Drain the water from the turnip (1), place it in a plastic bag, and add 150cc of Shio Happo Bijin. Squeeze the air out of the bag, tie the top, and leave it for half a day to overnight until it is done
