Creamed winter melon and crab meat
Cut the winter melon into 1cm thick bite-sized pieces, and boil in boiling water with a little salt (not included) until soft, about 15 minutes to drain.
In a heated frying pan with 1 tablespoon of scallion oil, stir-fry the shredded crab meat over low heat, add the sake and Chinese soup and bring to a boil.
Once it boils, add the boiled winter melon, salt and sugar, and simmer over a heat so that it will boil to allow the flavor to blend.
Mix the fresh cream and water-soluble potato starch and add to [3] to thicken it. Finish with aromatic and pour in some scallion oil and it's finished.
