Creamed winter melon and crab meat
Cut the winter melon into bite-sized pieces 1cm thick, and boil in boiling water with a little salt (not included in the recipe) for about 15 minutes until soft, then drain
Heat 1 tablespoon of scallion oil in a frying pan and fry the shredded crab meat over low heat, then add sake and Chinese soup and bring to a boil
Once boiling, add the boiled winter melon, salt, and sugar, and simmer over low heat until it starts to bubble, allowing the flavors to blend
Mix the cream and water-dissolved potato starch together and add to [3] to thicken. Finish by adding scallion oil for flavor
