Peel the taro and slice it into thin slices. Arrange on a heat-resistant dish, cover with plastic wrap and heat in the microwave for 2-3 minutes to soften. Chop the white onions roughly finely.

Fry the coarsely chopped white leeks in a heated frying pan with 1/2 tablespoons of scallion oil over low heat.

Once the scent is starting to lighten, add the sake, Chinese soup, salt and taro, cover and simmer for about 5 minutes.

Once the broth is reduced to about half, add a sweetness with sugar and crush the taro with tamago.

Once the moisture is removed, transfer it to a container and it's finished.
