How to make it

Rub the clams together and rinse with water

Make a brine by dissolving 15g of salt in 500ml of water

Place a colander over a bowl and add the clams

Pour in salt water until it is just covered

Cover with aluminum foil to keep dark

Leave at room temperature for about an hour to allow the sand to escape

Drain the clams in a colander and let them sit for 30 minutes

Remove from the container and ready to use
