Basic potato salad
Steam the potatoes and carrots with the skins on to soften them, then peel them while they are still hot
Roughly mash the potatoes and dice the carrots
Thinly slice the cucumber, rub with salt and squeeze out the water
Chop the ham and eggs into coarse pieces
Mix everything in a bowl and season with mayonnaise, salt and pepper
Let rest in the refrigerator for 10 minutes to allow the flavors to blend
