Steamed lotus root sesame seeds

Peel the lotus root, cut it into strips, and steam it in a steamer for about 8 minutes
Dilute the sesame dressing base with bonito stock (or water) and mix well to make the sesame sauce. Beat the egg whites until they form stiff peaks
Remove the steamed lotus root, top with whipped egg whites, and steam again for 1-2 minutes
Remove to a plate and pour the sesame sauce over it to finish
