Tofu tomato coulis

Cut the silken tofu into 4 equal parts, add a pinch of salt into boiled water, add the tofu, heat it for about a minute, then drop it in ice water and squeeze it.
Add [A] to the basic tomato coulis and mix well with a whipper. Chop the leaves into shredded slices.
Drain the cold tofu, place on a plate, and pour tomato coulis over it. Topped with shiso leaves and finished.
