Tofu with tomato coulis

Cut the silken tofu into quarters, add a pinch of salt to boiling water, add the tofu and heat for about a minute, then drop it into ice water and squeeze out the liquid
Add [A] to the basic tomato coulis and mix well with a whisk. Shred the shiso leaves
Drain the cooled tofu, place it on a plate, and pour the tomato coulis over it. Top with shiso leaves to finish
