Sweet and sour fried bitter melon and pork
Remove the pulp from the bitter melon with a spoon and rub in salt. Once the bitter melon has softened from the salt, slice it thinly
Cut the pork into bite-sized pieces and season it. Thinly slice the bamboo shoots and shiitake mushrooms (soaked in water)
Heat 100cc of salad oil in a frying pan, then fry the ingredients in (2) in oil and drain
Add thinly sliced bitter melon, Chinese soup, and sugar to a frying pan to sweeten the bitter melon
Once the Chinese soup has thickened, add the fried bamboo shoots, shiitake mushrooms, pork, and the mixture of [A] and stir-fry to evaporate the water
To finish, drizzle with sesame oil and serve on a plate
