Sweet and sour fried bitter melon and pork
Remove the bitter melon cotton with a spoon and rub with salt. When the bitter melon becomes soft with salt, slice it into thin slices.
Cut the pork into bite-sized pieces and season it. Slice the bamboo shoots and shiitake mushrooms (resubmerge with water) into thin slices.
In a frying pan with 100cc of salad oil, pour the ingredients from [2] through the oil to drain the oil.
Add thinly sliced bitter melon, Chinese soup, and sugar in a frying pan and add sweetness to the bitter melon.
When the Chinese soup is at a boil, add oiled bamboo shoots, shiitake mushrooms, pork, and the mixed [A] and fry to remove any moisture.
Finish by pouring sesame oil in it and then pouring it on a plate to finish.
