Pork loin with shojin sauce

Slam the pork loin with the back of a knife to flatten it well
Sprinkle salt and black pepper on the pounded pork loin, then fry it in a frying pan with 1 tablespoon of salad oil until browned
Place a weight on top to prevent the pork from warping. Once browned, cut it into bite-sized pieces and arrange on a plate
Heat the frying pan again and warm the shojin-sho (vegetarian soy sauce). Dilute this with sake, Chinese soup stock, and oyster sauce, then add water-dissolved potato starch to thicken. Finish with sesame oil for flavor
Pour the sauce from [4] over the pork on a plate and garnish with mint to finish
