Shrimp and soba noodles stewed

The pre-treated shrimp is opened to the belly and sprinkle with salt and pepper to season.

Once the shrimp is cooked thoroughly, add thinly sliced white onions, ginger and sake to remove the shrimp smell.

Add Chinese soup, sugar and soba noodles that have been recycled with water to the alcohol that has been poured out. Cover and simmer in a stew.

When the soup is at a boiling point, season with salt and pepper to finish. Add some shiso flowers to the colour.
