Soak the wood ear mushrooms in water, boil for 5 minutes and remove any hard stems
Heat salad oil in a frying pan and fry the wood ear mushrooms, peeled shrimp, and raw spinach. Once the shrimp is lightly cooked, season with a little salt
Place the ingredients in a gratin dish, pour the white sauce over it, sprinkle with breadcrumbs and Parmesan cheese, and bake in the toaster for about 8 minutes
Once cooked through, it's done
