French Dressing
This is Chef Kataoka's classic French dressing. It can be prepared in advance and is versatile, allowing for a variety of variations. The popular sashimi dressing is also based on this. The golden ratio of salad oil to vinegar and lemon juice is 3:1. Grated onion and mustard add depth and mellowness to the flavor
How to make it

Add mustard, salt, pepper, and 1/3 of A to the grated onion and mix with a whisk

Add the salad oil little by little to Step 1 while stirring constantly. Add the remaining Step 1 in two batches
