Cut the pomelo peel into thin strips and boil in water for 1-2 minutes. Drain and return to the pot

Add enough water to cover the skin, bring to a boil, and simmer over low heat for about an hour. Once the skin is soft, add the granulated sugar in 2-3 batches, simmer for about 15 minutes, and once it has thickened, remove from the heat
