Grilled saury figs served with grilled saury

This dish is made by quickly grilling saury for sashimi and finishing it with figs. By applying vinegar to the skin of fish, it will be difficult for the skin to stick to the frying pan or net.

How to make it

Cut off the middle bone part of the saury for sashimi and apply vinegar to the surface of the skin.

Heat the frying pan and cook with the saury skin down. Bake for about a minute, then remove it on a cutting board and cut it into bite-sized pieces.

Peel the figs, cut into bite-sized pieces, and arrange them in a bowl. Top with saury and pour olive oil if desired to finish.
