When preparing saury for sashimi, cut off the backbone and apply vinegar to the surface of the skin

Heat a frying pan and fry the saury skin side down. After about 1 minute, remove to a cutting board and cut into bite-sized pieces

Peel the figs, cut them into bite-sized pieces, and arrange them in a bowl. Place the sanma on top and finish by drizzling olive oil over them to taste
