Basic mayonnaise

Homemade mayonnaise has a surprisingly light taste. It's easy to make, so it will broaden the range of dishes you can make. The key is to add oil little by little to the egg base and whisk it. The trick is to mix it vertically with a spoon, dripping it into a string. Finish with salt and lemon juice to taste
